Day 5 – Christmas canapés and nibbles. The word for canapé comes from French for sofa – as in the the garnish sits upon the bread as we sit on a sofa. These Christmas canapés are more creative than garnish on bread. Here are some suggestions for super easy, low carb, paleo friendly nibbles:
Cucumber with salmon pâté
Prepare cucumber slices and top with blitzed salmon with soft cheese and lemon juice.
Smoked salmon on buckwheat blinis
Make mini buckwheat pancakes (blend buckwheat, milk, baking powder, salt and an egg; shallow fry spoonfulls) and add smoked salmon and horseradish cream.
Filled little gem leaves
Prepare Waldorf salad (walnuts, yoghurt, chicken, apple) and spoon onto salad leaves.
Caprese salad on a stick
Half mini mozzarella balls, baby tomatoes and pop on a cocktail stick with a basil leaf.
Raw beetroot ravioli
Use a mandolin to slice thin slices of beetroot and leave to marinate in olive oil and lemon juice to soften. In the meantime blitz pine nuts, olive oil, shallots, lemon zest, lemon juice, nutritional yeast, salt and pepper. Spoon between the beetroot slices.
