As promised here is my Banana Bread recipe, full of protein and fibre and a great breakfast choice or afternoon snack.
Banana Bread
3 large bananas
30g soft butter
1 tbsp maple syrup (optional)
2 tsp cinnamon
2 tsp vanilla extract
3 large eggs
½ tsp bicarbonate of soda
1 tbsp lemon juice
100g ground almonds
100g walnuts
30g of ground linseed
Pinch of sea salt
Method:
Preheat oven to 170°C, line a loaf tin with baking parchment.
Blitz the bananas, butter, eggs, maple syrup , vanilla extract and lemon juice in a food processor or blender.
Add the rest of the ingredients and blitz again until the nuts are mostly ground.
Poor into the tin and bake for 60 minutes, cover with baking parchment if it starts to brown too much.
Test it is baked by inserting a skewer which should come out dry.
Remove and let it cool a little in the tin.
