Warming any fruit crumble

Sorry for the delay – finally here is the recipe for last week’s crumble.  The name really says it all.  You can use any berries or chopped fruit to make this warming, nutritious desert.  There is no added sugar and it is gluten free.  The crumble can be assembled in advance and popped in the oven when you are ready.

Warming any fruit crumble

Ingredients for the fruit filling:

5 Bramley apples peeled, cored and chopped

1 cup of berries (I used blackberries)

1/2 tsp ginger, cinnamon and nutmeg

1 star anise

zest from 1 orange

Topping

180g ground almonds

50g of whole almonds

50g coconut oil

1 pinch of salt

2 tsp vanilla extract

Whiz topping in a food processor.  Freeze the topping until you are ready to use it.  Place the fruit filling in a saucepan with a tablespoon of water and heat gently for about 15 minutes until the fruit starts to break down.  Fill the bottom of a 20cm square dish and sprinkle the topping over the top.  Bake for 25 minutes at 180C.
